Roasted Sweet Potato, Broccoli, Mushroom & Egg Salad (356 KCal, 23g P, 15g F, 36g C, 6g Fibre)
Ingredients
Sweet potato 3/4 cup diced, peeled and optionally boiled until half tender
Broccoli florets 1 cup
Mushroom diced 1 cup
Salt, chilli flakes, ranch/italian seasoning and peri peri seasoning to taste
Few sprays cooking oil
Boiled eggs sliced 2 no
Dressing –
1 tsp garlic paste
60 g Greek yoghurt
2 tsp mayo of choice
2 tsp chilli sauce
Chill flakes, ranch, peri peri seasoning and salt as per taste
1 – 2 tsp honey

Method
1. Simply roast veggies with seasoning and oil. I baked in a tray at 200 C for 15-20 mins. You can air fry instead for 10-15 mins on High, or pan fry until browned and golden.
2. Make the dressing by mixing all listed ingredients together.
3. Assemble salad with roasted veg, sliced boiled egg and salad dressing. Sprinkle some more seasoning, mix well and enjoy!
