CHICKEN SOUP RISOTTO
8 Tbsp unsalted butter
1 lb chicken breasts
S&P
3 carrots
3 stalks celery
1 yellow onion
6 cloves garlic
1 C arborio rice
Β½ C white wine
fresh herbs: rosemary, sage, thyme
1 parmesan rind
1 bay leaf
5-6 C chicken stock
Β½ lemon
BROWN | Add 3 Tbsp butter to Dutch oven over medium-high heat. Season chicken well & cook 2-3 min/side, until golden brown. Remove from pot & set aside.
AROMATICS | Add 1 Tbsp butter & carrot, celery, onion to pot. Season well. Cook until softened & fragrant, 5-6 mins.
TOAST | Add rice. Cook 2-3 mins, stirring often, until toasted. Deglaze with wine, scraping any browned bits from bottom of pot. Simmer 1-2 mins, until absorbed.
RISOTTO | Add herbs, bay leaf, parmesan rind, & 3-4 C chicken stock to pot. Bring to a boil. Reduce heat to very gentle simmer. Nestle chicken in pot. Cover & simmer 20 mins, stirring halfway through.
FINISH | Remove herbs & chicken. Shred chicken & return to pot with remaining 2 C chicken stock & 4 Tbsp butter. Stir. Finish with lemon juice. Adjust seasoning to taste. Serve & enjoy!
