I used guanciale, no bacon or pancetta.

For me the best in this slide is Rigatoni all’Amatriciana
(In others I don’t like some ingredients lol)
But in amatriciana parsley is not used and guanciale have to be in the sauce but i like your version

5 it’s not clear what you mean, ox tail would be coda but ossobuco is from the thigh so I’m not sure what part you are referring to
Depending how you cooked the oxtail / with what ingredients there could be different names. But Stufato di Coda (literally, stew of oxtail) would work. Spezzatino can also mean stew but that’s more when the meat has been cut into small bits.
super good man 😍. As others said, carbonara is too dry, use more cooking water (abundant).
In some Italian shops in the USA they sell bottarga, you could try it as well !
Also, you could try broccoli ripassati with orecchiette.

Oxtail Ossobuco could be Coda alla Vaccinara am I right? Also if you haven’t cooked it you should try it out, very particular recipe with chocolate, pinenuts and raisins

To me, everything looks awesome (and I mean it) except your carbonara. But seeing how good your are “ai fornelli” you’ll get that right in no time.
