Hello everyone. This is my first harvest and looking for some advice. I was planning o ferment them but not sure if I should mix them together or have them ferment separately as they usually take different ingredients for hot sauce. Unless you have a good recipe for doing them all together. What do you think? Fatalli, Scorpio, naga morich

  1. So I am going to be honest – I usually mix my peppers together because I do not get enough of one pepper type at one time to make doing a ferment worth it. But my recipe is also very simple

    1) One small to medium onion
    2) a head of garlic (that is right the whole head)
    3) Some fresh ginger root peeled if I have some
    4) about 2 lbs hot peppers
    5) Spring water and pickling salt

    The only caveat is I am a bit picky with color I do not ferment green peppers with red peppers because the resulting hot sauce color is not very attractive. Reds Oranges and Yellows usually blend fine however.
