My second pork shoulder on the pit boss. Why didn’t I upgrade sooner.
Loved my hillbilly barrel smoker but it wasn't the easiest at maintaining temp.
One day I'll figure out which way to slice it though.

My pork shoulders fall apart, and dont look like this. No need for slicing a certain direction. I would revisit your cooking method, unless that’s how you’re expecting it to come out. Cool hillbilly smoker!

For pork shoulders, i cook until internal temp is 203 and rest for at least one hour, and usually a couple hours. They should shred with ease and no slicing necessary. Unless that’s what you are going for?

Yeah that doesn’t look right at all. I’ve never undercooked something like that before. Made other mistakes but not that one.
If you are impressed now, wait till you cook it to about 204 and pull.

I just did two shoulders on monday on my louisiana grills pellet grill and they fell apart.

Edit. Reading comments sounds like I should be using the probes. I just cooked it the same as I did on the barrel. I used the smoke for a little less than an hour then upped the temp to 225 for 9 hrs then let it rest for an hour.
Outside temps were near freezing out the first couple hours, maybe that plays a factor?
It was super juicy, flavourful and tender but definitely not fall apart like 8 hrs in the crock pot.
Still have a lot to learn. Appreciate the advice.

Looks good to me! I’m in GA and all of the hole in the wall bbq spots around cook butt’s this way. You can order it sliced, chopped or chipped. Best bbq pork around. I’ve made plenty of pork shoulders myself that fall completely apart and have always considered that a failure despite still having damn good flavor. Sa.e with spare ribs, I don’t like mine falling off the bones, tender but still need to bite.

I have never seen anything like this before. I have probably smoked about 10 pork butts and they never ever looked like this.
