Duck Ramen! I bought this whole young duck for like 25$, was fun to cut up, carefully carving the breasts with their skin intact, I cooked them and the thighs sous vide, 55 for 2 hours. I made the broth with the rest of the beast, mirepoix and lots of ginger, reduced it on low heat, smelled amazing
Shoyu tare, duck fat, noodles, broth, sliced breasts, green onions and a bit of shiso chiffonade. Staff went ballistic lol and it was my first time prepping duck, cool stuff lol thought y’all would enjoy

This looks delicious! My chef would murder me if I made something like this for staff; my choices are pasta and meat scraps.

    Oh wow.

If I was served this ever I’d be so stoked.

Our staff meal is whatever dead food we might have. I have never worked a spot that did family or staff meal.

I am not a fan of duck in general, but I would gladly eat that up. Looks great.

I gotta ask. What’s up with the mini bowls?  Looks great and I’d be happy to get either.
