Great call. It’s amazing!

Big on sweetness and umami, although not super spicy. It’s also not very sour which makes me think it’s a younger kimchi (I may get another jar and chuck it in the fridge for 4-5 months).

Kae Sung’s napa kimchi is almost a polar opposite kimchi to MDK’s, which is my go-to (although also a young kimchi w/ tons of heat and crunch).

I’ll throw Kae Sung into the kimchi rotation & love to support a small family biz like theirs. The place is tiny – just a few refrigerators filled with different kinds of kimchi. At the very least I hope this post raises some awareness of their storefront & brings a few new people in 🙂

Would love to hear others’ thoughts and am open to any recs for an older, aged kimchis.
