Ok I’m gonna make 1 more recommendation. Roll out your dough and put it in a sheet pan then put it in the freezer for half an hour. Whenever I try to cut and bake chilled dough, I get lopsided shapes like your pumpkins and candy corn. You can cut them with metal cutters (and most plastic cutters) while frozen/near frozen, and bake them without having to wait for them to thaw.
