Just kidding. They do count, which is why this is not a pasta I make on a daily basis. It is, however, a MINDBLOWING occasional indulgence which takes a stay-at-home date night to a whole new level. 🤤
Recipe is pretty basic, I didn’t have Parmesan or Pecorino cheese so used a mix of mozzarella + cheddar and added chilli flakes cuz I can’t live without the spice. 😃

Ingredients (serves 2)
2.5 tbsp chopped bacon (you can use chicken/turkey bacon)
1 tbsp chopped garlic (you can also just crush a few pods of garlic, use it to flavor the bacon and take it out later)
2 eggs
1/2 cup grated cheese (Parmesan/pecorino is best)
Salt and pepper to taste
100-120 g cooked pasta
Few spoons of pasta water
Optional seasonings –
Chilli flakes
Italian seasoning

Method
1. Cook the bacon along with garlic until brown and crispy.
2. If you’ve added crushed whole garlic pod instead of chopped garlic, take it out at this stage.
3. Mix in cooked pasta.
4. Beat the eggs in a bowl, add a pinch of pepper, 3/4th of the cheese and beat well.
5. Take the pasta off the heat and quickly add the egg-cheese mixture.
6. Mix well and fast – this part can go wrong and you’ll end up with scrambled eggs if you don’t mix everything quickly.
7. Add a little pasta water to help form a smooth silky sauce.
8. You can heat it a bit to get the sauce thicker – but be careful to not scramble the eggs.
9. Season with salt, pepper and optionally chilli flakes and oregano, sprinkle remaining cheese and serve away! 🤤❤️
