3 jalapeños diced. 1 shallot diced. Sauté them with some bacon bits. Then I mixed them with whipped cream cheese and shredded sharp cheddar. Spread it on the buttered bread and let it do its thing like you would a normal grilled cheese sando.

I love to make a similar sandwich, but mine has full bacon strips instead of bits. I serve it with a side of ranch dressing.
