Beef bourguignon, Shepherd's pie, chicken and veg teriyaki stir fry, kimchi pork stew with sides of daikon and bean sprouts, and carrot soup with lentils.
Feels good to know I won't have to think about cooking for a few weeks after our baby arrives!

We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!
Didn’t really use recipes for most but here’s my best shot at writing some guidelines :
Used this recipe for a list of ingredients for the beef bourguignon, then just improvised since I’ve made beef stew so often:

Pork stew: I started by dicing pork shoulder in bite sized pieces, then browning them in a large pot. Then I added some onions, garlic, tomato paste until a good fond developped, then deglazed with some red wine. Then add as much kimchi as you want, depending on how spicy you want the dish, and add the pork again. Add beef broth until the meat is almost covered but not submerged, bring to a boil then put in the oven at 350f for about 2 hours. Check doneness, it should easily break down when pressing on a piece!
Shepherd’s pie, kept real simple. Cooked ground beef with some onions. Add a layer of 1 part creamed corn and 1 part niblets. Then top with mashed potatoes and cook at 350 until golden brown on top.
Chicken stir fry: I just sautéed some chicken thighs cut into bite sized pieces, used teriyaki sauce from Costco to toss it in, then sautéed some carrots, bell peppers, onions and pineapple to toss together.
Carrot soup: sautéed some onions with some garlic and curry powder, while I chopped as many carrots as could fit in my pot, then add it all together and cover with chicken stock, season, then boil until carrots are tender. Then add lentils and let simmer a few more mins, then blend. Finally add some coconut milk for a nice creamy texture, a bit of lemon juice to balance things out.
