
I have made two patches of jalapeño jelly today and one batch is nice and clear and the other batch is very bubbly and cloudy. There was very little foam in either batch so I don’t think that is the problem, but I’m not really sure. I used the same ingredients and method for both batches. The “bubbly” batch did need to be filled a little more than the other one so I’m guessing it is air bubbles, I just can’t figure out why one batch would do this in another one wouldn’t. Any guidance would be greatly appreciated.
