Gotta a free hour of cooking time on the pork shoulder Sunday morning

Costco had the Pork Shoulder on sale for $8 off per pack. Picked up a 16.24lb pack for just $32.44 or $1.99/lb. Put these on the Traeger Costco Lil Texas Elite model just before 2AM so got a free hour of cooking as the clocks rolled back. Tried two different rubs, but really not that much different in taste. Both came out good.
I cooked these at 180F setpoint on the Traeger which translates to a swing range of about 215F to 235F or an average of 225F on the grill grate probe. I use a Govee WiFi meat thermometer which has four probes, and all have been verified to be accurate within a couple of degrees using boiling water.
My trick is once the meat hits 150F, I don’t wrap in foil, but instead put each one into its own preheated covered cast iron Dutch, before going back on the grill. I let them cook until they hit 205F internal before removing from the grill. I did bump the temp up one click on the Trager which translates to an average of 250F at the grill grate for the last couple of hours because I was getting hungry. I let them rest in the covered Dutch oven for at least an hour and a half before removing them to drain the fat out of the Dutch oven. They then they go back into the Dutch oven to be pulled. The picture above is just before they went back into the Dutch oven. The Dutch ovens keep the mess to a minimum and make the whole cook process so much easier.
Dinner was great last night, and I now have eight ~1lb bags of vacuum sealed pork in the freezer and another ~1lb container in the fridge for tacos or nachos this week.
