    First time I had to cut salmon I was in the middle of Saturday lunch, head chef didn’t show up, sous was on holiday so it was just me with a rookie who knew less than I did.

    I ended up watching a youtube tutorial on my phone while doing it and was shocked at how easy it actually is. Butchered a few bits mind, but still could have been much worse.

    Used to be a sushi chef in college. Pre-service meal for me and the head sushi chef would be a plate of salmon nigiri and a spicy salmon hand roll (or Philly roll for me cause I’m a degenerate). Miss that. Nice knife.
