They were SO spongey! Not sure how much crisp the first side should be though.

    Look nice and thick, and spongey is how they should be! The bottom should be fairly evenly brown (but not too dark) and the top should be quite holey with pretty much no colour. You can pick up colour on the top when if you toast them later on, though if you’re going to eat them straight away you can flip to toast the top for just a bit of colour immediately. Unlike English muffins, you don’t open these up, you toast them and top them with butter, jam, peanut butter, etc.

    I’ve tried making crumpets a few times, especially when I was making sourdough starter as it was a good use of discard but I could never figure out how the hell the store bought ones have the little holes and rubbery feel that peels vertically. I’ve never been able to figure it out…

    I love crumpets so much… every time I go to the UK I smuggle home several packages. These look fantastic!
