I just baked my first ever bread from scratch. It's a beer bread. Is she the most beautiful bread ever? Not at all. Did I almost give up because the dough seemed unworkable? Yes. Is it the best bread I've ever had? No. Still tastes good though. Am I hella proud of doing this? Yes. Will there be more bread in the future? Y E S.

    [Recipe (originally in Dutch):](https://www.laurasbakery.nl/bierbrood/)

    – 400 g wheat flour
    – one bottle (330 ml) of beer (I just used a lager that’s been standing in my shed for a bit too long, but was still good)
    – one packet (7 g) of dry yeast
    – pinch of salt

Mix all the ingredients in a bowl. The dough should be wet and sticky. Cover and let rise for at least 8, and no more than 18 hours. Letting it rise overnight is fine (which is what I did).

Preheat the oven to 220 °C with the baking tray in it (I ended up using a round baking dish because my dough was quite runny). Dust your working surface with flour and dump the dough on it. Punch out the air and shape it into a ball. Put the ball of dough on parchment paper.

Put the parchment paper with the dough ball on your preheated baking tray (like I said, I used a baking dish to prevent my dough ball from becoming a pancake) and bake it in the oven for 35-45 minutes. Cover with foil (I ended up using the lid of my baking dish) after 20-30 minutes to prevent the crust from browning too much.

My first loaf was very similar to this, I also made a beer bread too 😂

I recommend stretch and folds or slap and folds rather than trying to knead such a wet dough. I also recommend preheating a Dutch oven and then baking in one if you’d like a crusty loaf.

Stick it in a toaster, cover it with butter, beautiful.

    All bread is good bread.

  4. Go darker next time
Put it in loaf pan if you don’t want to deal with shaping
Make sure it’s proofed enough / puffy before baking
