I’m fairly new to this but was under the impression time was more of an indicator of how other variables are contributing to the shot, not something to use as a measurement in themselves. I am also under the impression a cortado should be 50/50 espresso and milk, so wouldn’t a ten second extraction result in a tiny drink that would resemble a macchiato?
