Haitian Spaghetti
Measurements/ Ingredients:
1 Tablespoon of Onion Powder
1 Tablespoon of Garlic Powder
1 Teaspoon of Black Pepper
1 Cube of Chicken Maggi
1/4th Cup of Extra Virgin Olive Oil
Your choice of meat (Turkey/Beef)
4-5 Tablespoons of Tomato Paste
1 Red Bell Pepper
1 Green Bell Pepper
1 Red Onion
1 Box of Barilla Spaghetti
For Epis:
1/2 Red Bell Pepper
1/2 Green Bell Pepper
1 Habanero Pepper (optional)
4-5 Bulbs of Garlic
1-2 Teaspoons of Oil
Cooking Instructions:
1. To begin, dice onions, bell peppers, garlic, and beef frank (or preferred meat).
2. Blend the remaining bell peppers and garlic to make epis seasoning.
3. Boil water with salt, then add spaghetti until cooked.
4. Reserve some pasta water.
5. In a separate pan, cook beef frank until golden, then set aside.
6. Saute diced bell peppers with seasoning (garlic powder, onion powder, black pepper and Chicken Maggi Cube) until tender, adding some spaghetti water and epis seasoning.
7. Incorporate red onions and let them cook. Combine cooked frank, bell peppers, onions, and tomato paste.
8. Finally, mix in cooked spaghetti, additional epis seasoning, and pasta water for seasoning.
