



100% AP flour. 80% hydration. Instant yeast. Soaked the rye berries/kernels for 24hrs then also boiled them for 20 min to soften them further. Did two loaves in the Dutch ovens and two in the Pullman pans. Turned out nicely I think. They add an interesting chew!
