I have a hard time staying full throughout the day, snacking on smaller meals really helps me, which is why I tried and modified this recipe.
Here’s the recipe (makes 24 mini ones):
1 1/2 cup Tapioca flour
2/4 cup low fat mozzarella
1/4 cup Parmesan
1/4 cup sharp cheddar
2/3 cup milk
1/3 cup oil (I used canola but you could probably use something lower in calories)
1 large egg
1/2 teaspoon salt
I put it in the oven for 400 degrees and 15 minutes, you might want a lower temp if you want them to be softer. I basically followed the same steps as in this video:
