Longtime lurker and commenter, first time poster.
This recipe surprised me. I made it on a whim for breakfast meal prep this week and wow it’s been so good. It’s like a savory sausage bread pudding. I’m loving it. My husband loves it. The servings are huge and so filling. I’ll add a scrambled egg or two on top just because I love eggs for breakfast but, I typically can’t finish my entire portion and save it for a pre-lunch snack. The recipe that I made came out to about 455 calories and 42 grams of protein per serving (6 servings total) This thing is denseeeee!

What I did differently:
– ground turkey
– 2% Good Culture cottage cheese
– fat free cheddar
– red pepper and half a poblano pepper
– Fairlife fat free milk
– cooked mine in the oven on convection mode at 375°

What I would do to make it ever lesser calories
– egg beaters instead of eggs

I might even try doing a baking protein powder instead of oat flour in the future

Reheat in the microwave or the air fryer. Holy heck it’s good
