




I've been lurking here for a long time. I know this isn't anywhere near as good as most bread I see posted but I don't think it came out terrible. The recipe I used is in the pics. I did a 24 hour cold proof because I do have some experience making pizza dough and know that cold proofing helps flavor and color. After the cold proof, I took it out of the fridge, shaped it, and let it rise for another 2.5 hours. I also baked this on my pizza steel instead of just a baking sheet. It seems like it worked. Good taste and not heavy or dense. I can't give credit to the original poster because it seems like the profile has been deleted. Any advice or tweaks my current recipe (or even another recipe) would be much appreciated.

And I used all KA bread flour.
Some might say it’s too dense. I disagree, I think the crumb is perfect for sandwiches. 10/10 wouldn’t change a thing. Go make a sandwich
What makes it Italian?
May be sacrilege here but a little dough enhancer might make the dough hit the sweet spot for loft.
