Scrag end of lamb or neck and beef shin or chuck is what you want for authentic Scouse. Large chunks. More spuds and carrots. Just white onions and not leeks for tradition.
What you’ve made is essentially Beef Cawl, a Welsh dish. Not bad tho

I make my Scouse half beef half lamb. No leeks lol. Red cabbage and a dollop of hp sauce is a must. Think you’ve made a beef stew, needs some dumplings. Looks delicious though.
