Ingredients:
For the Kofta (Meatballs):
500g ground beef or lamb (or a mix of both)
1 small onion, finely grated
3 cloves garlic, minced
1 tablespoon ginger, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground black pepper
1/2 teaspoon turmeric powder
1/2 teaspoon chili powder (optional, for heat)
1/2 teaspoon salt
1/4 cup fresh cilantro, finely chopped
For the Sauce:
2 tablespoons oil (vegetable or olive oil)
1 large onion, finely chopped
3 cloves garlic, minced
1 tablespoon ginger, minced
2-3 large tomatoes, finely chopped (or 1 cup canned tomatoes)
1 tablespoon tomato paste (optional, for thickness)
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground black pepper
1/2 teaspoon turmeric powder
Salt to taste
1-2 cups water or chicken broth
1/4 cup fresh cilantro, chopped, for garnish
Instructions:
Step 1: Prepare the Kofta (Meatballs)
In a large mixing bowl, combine the ground meat, grated onion, minced garlic, ginger, cumin, coriander, black pepper, turmeric, chili powder, salt, and chopped cilantro.
Mix everything thoroughly with your hands or a spoon until the spices and aromatics are well incorporated.
Shape the mixture into small, round meatballs (about 1 inch in diameter).
Place the meatballs on a tray and refrigerate for 15–20 minutes to help them hold their shape.
Step 2: Make the Sauce
Heat the oil in a large skillet or saucepan over medium heat. Add the chopped onions and sauté until golden brown.
Add the minced garlic and ginger, and cook for another minute until fragrant.
Stir in the chopped tomatoes (or canned tomatoes) and cook until they break down and form a thick sauce (about 5–7 minutes).
Add the tomato paste, cumin, coriander, black pepper, turmeric, and salt. Stir well to combine.
Pour in water or broth to thin out the sauce, starting with 1 cup. You can adjust the consistency later if needed.
Step 3: Cook the Kofta in the Sauce
Gently place the meatballs into the sauce, making sure they are at least partially submerged.
Cover the pan and simmer on low heat for 25–30 minutes, or until the meatballs are fully cooked and tender. Stir occasionally, adding a little more water if the sauce gets too thick.
Taste and adjust the seasoning if needed.
Step 4: Garnish and Serve
Sprinkle fresh cilantro over the kofta and serve hot.
