Had a three day weekend, so I could finally bake again. Missed it so much, but also seem to have lost some skill.
I made a brioche braid, with ginger pieces and glazed with ginger infused honey, based on a recipe by Bread from Jeffrey Hamelman. Super fluffy!

Second pic is a sourdough loaf, with bread flour and potatoes. Maybe it was over proofed? It degassed a bit when flipping over, and I think my shaping was not so good anymore. Still tasty though!

Finally tried my hand at making croissants from the 19th century after watching Tasting History. I definitely need more practice there…

All in all, busy weekend, but I love baking for my family and friends.
