Chicken Carcass Soup with Poached Eggs (No Noodles Needed!)
I didn’t even miss the noodles! I tried adding one egg as a poached egg and another as a soft-boiled egg. So good! The eggs made the soup extra creamy and delicious.

Enjoy this [recipe](https://sundaysuppermovement.com/turkey-carcass-soup/) as well! I swapped out the turkey carcass for a chicken carcass and of course eliminated the noodles, instead added eggs which I corrected below for you!
– 3 Tablespoons olive oil – 3 cloves garlic, minced – 1 onion, minced – 4 celery stalks, diced – 4 large carrots, diced – 12 cups water – 1 turkey/chicken carcass – 2 chicken bouillon cubes or 2 teaspoons chicken bouillon powder – 2 bay leaves – 4 Tablespoons fresh parsley – eggs 🥚 (or 16 ounces pasta noodles of your choice) – ¼ teaspoon salt adjust to taste – ¼ teaspoon pepper adjust to taste

Mmm. Carcass. Lol.
IDK man, i think maybe come up with a new name, that one’s not very appetizing, like, might as well be calling it “fowl cadaver” or “cock-a-doodle-doo corpse” 😅
