I didn’t even miss the noodles! I tried adding one egg as a poached egg and another as a soft-boiled egg. So good! The eggs made the soup extra creamy and delicious.

    Enjoy this [recipe](https://sundaysuppermovement.com/turkey-carcass-soup/) as well! I swapped out the turkey carcass for a chicken carcass and of course eliminated the noodles, instead added eggs which I corrected below for you!

    – 3 Tablespoons olive oil
    – 3 cloves garlic, minced
    – 1 onion, minced
    – 4 celery stalks, diced
    – 4 large carrots, diced
    – 12 cups water
    – ⁠1 turkey/chicken carcass
    – ⁠2 chicken bouillon cubes or 2 teaspoons chicken bouillon powder
    – ⁠2 bay leaves
    – ⁠4 Tablespoons fresh parsley
    – eggs 🥚 (or 16 ounces pasta noodles of your choice)
    – ⁠¼ teaspoon salt adjust to taste
    – ⁠¼ teaspoon pepper adjust to taste
