I love guacamole with tortilla chips, but it's hard to find keto alternatives for the corn tortillas.
I stumbled upon a keto cheese cracker recipe that I slightly modified, so it's less hassle to prepare and it's much more flavorful.

    Ingredients:

    – 170 g grated Grana Padano cheese
    – 160 g almond flour
    – 0.5 tsp salt
    – 0.5 tsp garlic powder
    – 1 large egg
    – 1 tbsp butter, melted
    – Flake salt for sprinkling

    Preparation:

    1. Preheat oven to 150C. Line a work surface with a piece of parchment paper.

    2. Get a large bowl and add the almond flour, grated cheese, salt, garlic powder and egg. Knead it together well and make it into a large ball.

    3. Transfer the dough onto the middle of the parchment paper on your work surface. Cover it with another piece of parchment paper, so the dough doesn’t stick to your rolling pin. Roll the dough out as thin as you can (2-3mm).

    4. Move the rolled out dough onto a large oven tray, then remove the top parchment paper.

    5. With a pizza cutter (or sharp knife), cut the dough into squares, then into triangles by cutting them half, diagonally.

    6. Brush the dough with the melted butter and sprinkle with flake salt.

    7. Bake for 20 minutes on 150C.

    8. Remove from oven, wait until it cools down and break it into pieces along the cut lines.
