Creamy Cajun Sausage & Pepper Ravioli is the ultimate comfort meal, combining tender cheese ravioli with smoky sausage, bell peppers, and sweet onion in a creamy, mildly spicy Cajun sauce. This dish brings together rich flavors and just the right amount of heat, perfect for weeknights or anytime you’re craving something hearty yet easy to prepare.
* 16 oz cheese ravioli about 24 ravioli
* 1 tbsp butter
* 12 oz smoked sausage cut into slices- I like turkey kielbasa
* 4 slices thick cut bacon chopped
* 2 cups sliced bell pepper a mix of green & red
* 2 cups sliced yellow onion
* 1 tbsp minced garlic
* 2 tsp Cajun seasoning
* 2/3 cup canned diced tomatoes
* 2 cups heavy whipping cream
* 1/3 cup grated Parmesan
* salt & pepper to taste
Cook the Ravioli:
* Bring a large pot of salted water to a boil.
* Add ravioli and cook according to the directions on the package.
* Drain the water and set the ravioli aside
Cook the Sausage and Vegetables:
* In a large deep frying pan or Dutch oven, melt butter over medium-high heat.
* Add sliced sausage, sliced bell pepper, sliced onions, and chopped bacon.
* Cook, stirring often, for 8-12 minutes until sausage and bacon are browned and bell peppers and onions are tender.
Add Garlic and Seasoning:
* Add minced garlic, diced tomatoes, and Cajun seasoning.
* Stir and cook for another minute.
Make the Sauce:
* Turn heat down to medium-low.
* Add heavy cream, grated Parmesan, and salt & pepper to taste.
* Stir to combine and bring to a simmer.
* Simmer, stirring often, for 6-12 minutes until the sauce reaches your desired thickness.
Combine Ravioli and Sauce:
* Fold the cooked ravioli into the sauce.
* Simmer for another minute to warm through.
Serve:
* Garnish with chopped parsley and more grated Parmesan.
