An omelette is probably my favorite 5-minute spicy dish. It’s also the quickest way I know to easily enjoy superhot peppers, as it tones down their spiciness a bit but keeps all of the flavor.
This one was made with a 20cm/8-inch pan, 3 eggs, 2 cut bacon strips, 2 diced Trinidad Moruga Scorpions (red + yellow), and 1 slice of cheese torn to little bits.
Fry the bacon and scorpions for a few minutes, then set them aside once the bacon’s crispy. Add eggs whisked with chive and parsley, make the omelette, salt it, fill it, flip it, leave to cook for a bit longer, depending on how well-done you want the texture to be. I like to serve the result over sliced bread with a bit of parsley on top.
And yeah, I messed up the presentation here by not spreading the fillings evenly 😅
