    Oh man, Korean-Mexican fusion is my guilty pleasure. It looks really good! Galbi is one of those cuts of meat not commonly seen in tacos but it makes total sense to put in anyways! If you’d like, do a quick sauté on your diced kimchi next time you make this again; not saying it’s bad raw by any means but frying it will level up the flavor by a mile!
