Chocolate Pecan Pie
9 inch pan with removable bottom
200g (.75) Cups) Chocolate graham crumb + 40g melted butter + 50g Sugar
250g (2 cups) Chopped pecans
165g (3/4 cup Packed) brown sugar (NO LUMPS)
50g (3 tbsp) All-purpose flour/Plain Flour
40g (2 tbsp) Cocoa powder (Ghiradelli / Valrhona / Guittards etc)
3 large eggs
260g (3/4 cup) Golden syrup/Dark Corn Syrup
40g (2 tbsp) Salted butter , melted
10g (2 tsp) Vanilla bean paste
1.5g (1/4 tsp) Salt
75g (1/3 cup) 70% Chocolate, Melted
50g (1/4 cup) 70% Chocolate Chopped
Spoonful of Chocolate Creme Patissiere to serve

Instructions
– Preheat oven to 340 °F (170°C)
– Combine well the chocolate graham crumbs + 40g melted butter + 50g Sugar and press in the pie dish base and up the edges.
– In a medium mixing bowl, whisk together the brown sugar, flour, cocoa powder, eggs, corn syrup, melted butter, vanilla, salt, and melted chocolate. Mix until thoroughly combined and smooth then add the pecan pieces.
– Slowly pour the mixture over the graham base.
– Bake on the centre rack for about 45 minutes (oven depending), or until the pie appears barely set.
– After 30 minutes of baking, either tent a piece of foil over the entire pie OR place a larger baking pan over the top. Cook for the remaining 15 minutes
– Remove from the oven and transfer to a wire rack to cool completely in the refrigerator before slicing.
– Serve with a spoonful of homemade chocolate pastry cream (Creme Patisserie)

    I'll work this over to make a low carb version. Just presently struggling with my Allulose source, who suddenly decided to only stock liquid Allulose in lieu of granular. Posing a little bit of challenge with the additional 'liquid'.
