Came home wasted at 1am and made English muffin dough that rose overnight. They turned out to be my best batch ever and I have no idea how to replicate what I did.

    Well if overnight fermentation isnt’ your typical thing that’s probably it. Longer fermentation = better flavour. I routinely bulk ferment things for around the typical timeframe then cold proof in the fridge until the next day. This makes them taste dramatically better.

    Also in things like english muffins, a little whole wheat does wonders, so if you need to up the flavor more try adding more whole wheat but ideally no more than 20% (30% alternative flour is the pro rule of thumb to not exceed) before it starts to take it’s toll on the gluten strength. I personally use about 10-15% einkorn whole wheat but be careful as this will make the dough a LOT more stretchy if your hydration is off; this is because einkorn improves the extensibility of dough by A LOT.

    In other words, instead of trying to recreate it, just do things to maximize the flavor with good technique and see if you can end up on something just as good or better.

    You have my sympathies. This post is reminding me of when I got blackout drunk at the friendsgiving after party and made the best baked cheese and onion dip of all time by drunkenly throwing chopped veggies and all the remaining cheese from the cheese plate in a Pyrex and baking it for however long it took to remember not to burn the house down. This was like 15 years ago and my friends and I were never able to replicate it.

    my girlfriend’s mom injured herself while we were baking lemon bars. i had to drive us to the ER, so i shut off the oven and left the bars inside because i had just poured the lemon mixture over the shortbread. they were the best fucking lemon bars i have ever had and i have not been able to recreate it. i hope your trial ends before mine, good luck making them again!

    I once made the best brownies in the middle of a mental breakdown. That was 3 years ago and I have had many breakdowns since then, but I haven’t been able to make them as tasty.

    edit: I have been informed by my psychology major best friend that it was in fact, an emotional breakdown and not a mental breakdown lmao

    Once I perfectly recreated El Pollo Loco chicken flavor totally on accident while improvising. Multiple attempts could not recreate it.

    Truly, we must appreciate these beautiful accidents when we have them, for they will forever stand alone. Eat your English muffins with a love for their ephemerality. We are dewdrops.
