Rainbow salad with creamy peanut dressing ( 315 cals, 39g protein) big salads are such a cheat code

I’ve made a variation of this salad so many times I thought it would be a crime not to share. Added a quarter for size comparison, this serving is HUGE. This is also the perfect salad to meal prep because it doesn’t get soggy!
