1. in a medium sized pot, cook down a large diced onion and canned or fresh tomatoes. i used canned tomatoes. 2. add water as needed, and mix in as much gochujang as your heart desires. 3. i waited for the onions to soften to immersion blend the soup. if you donβt have an immersion blender, you can throw it into a regular blender, just let it cool first. 4. once blended, add a few spoonfuls of butter and some soy sauce. thatβs all there is to it!
on the side, i torched some leeks and tomatoes. i also made some lo mein noodles to throw in there. but thatβs optional!

Gonna try this out. I might roast the tomatoes and onions and add garlic and then put it in a pan with the gochujang. Such a great idea! I’ve been craving kimchi grilled cheese too.
