Blueberry Jelly Recipe:
4 cups blueberry juice
7 cups sugar
1 box of pectin
1/2 t. butter (opt.)

Mix juice and pectin together. Bring to a rapid boil. Stir constantly.
Add butter to prevent foam forming.
Add sugar to fruit mixture. Return to a full boil. Boil exactly 1 minute, stirring constantly.
Remove from heat.
Skim off any foam.
Ladle immediately into prepared jars.
Fill leaving 1/4 inch headspace.
Water-bath can for 5 minutes.
Let prepared jars of jelly sit at room temperature for 24 hours.
Store in a cool dark place.
Refrigerate after opening.
Enjoy!!

  1. Back in 1984 my mother was diagnosed with diverticulitis. Since she couldn't eat small seeds, I made her some blueberry, blackberry, and strawberry jellies along with orange marmalade for Christmas. The hardest part was straining the seeds. I used an old- fashioned wax seal instead of canning. Tomorrow I'll be baking 8 loaves of blueberry Amish Friendship bread, I've got 2 starters going right now. Blessings for your family and farm.

  2. That brought back memories of my childhood. The farm across the road was owned by a retired couple who farmed fruits and veggies. We all helped out with the huge garden and orchard and canning. Good times, great food and even better people. Thanks for sharing, Rhonda.

  3. Rhonda's Kitchen, this was a good episode. I feed the Oreal's; They LOVE Gape jelly. I love to watch them. I usually have about Three pairs. there about gone now teaching their babies how to feed themselves. I love my birds. I'm making them Grape Jelly next year.   6. The sun burner has been on high here so I try not to cook much so I don't heat up the house anymore. Relief is on the horizon in about a week. The jelly looks awsome, thanks
