If you haven’t tried Turkish eggs before, make sure to add this to your list of must-try dishes 🤤
**Ingredients:**
✨ 2 XL eggs
✨ 3 tbsp YoPRO plain yoghurt
✨ Herb mix (dry or fresh) – mint & dill
✨ 1-2 tbsp extra virgin olive oil*
✨ 1/2 tsp garlic (crushed, fresh/paste)*
✨ 1/2 tsp chili flakes (optional)*
✨ Black/red pepper, to taste
✨ Salt, to taste
✨ Sourdough or bread of choice, to serve
✨ Additional greens to serve (e.g., rocket, spring onion, etc.)
(*I often triple or quadruple the quantities to make a big batch of this 😍)
**Method:**
1. Bring a medium saucepan of water to a boil. Add about 1/2 to 1 cup of white vinegar, stirring to combine. Reduce the heat slightly.
2. Crack the eggs and gently lower each one into the simmering water using a deep spoon, cup, or ramekin. Cook for 5-8 minutes, or until your desired texture is achieved. Transfer to a plate.
3. Meanwhile, heat the olive oil, garlic, chili flakes, and pepper over medium heat for a few minutes until the garlic is fragrant. (I typically make a larger batch of this to use later.) Set aside.
4. To prepare the herby yogurt, combine the yoghurt with the herbs and season with salt and pepper. Mix well and spread evenly on a plate or shallow bowl.
5. Place the cooked eggs on top of the yogurt, followed by a few spoonfuls of the chili-garlic oil. Add any additional vegetables or toppings of choice! (Tip: pickled onions also work great with this dish.)
6. Serve with toasted sourdough or your bread of choice.
