Roasted sweet potato buried under beans and soured cream, with green beans and broccoli

One of my favourites for its low effort, welcomed on a chilly autumn day.
I rub the sweet potato skin with a little oil and salt so it gets crispy. Set the timer and take a nap while its roasting… 😴
