Picked up a Chuck from Costco for $20 vs $100 Prime Rib. Decided to use the Chef Step recipe video below. I tied the Chuck up in butcher’s twine before pre-searing on a cast iron with a little salt. Added crushed garlic with rosemary, thyme, sage to the cast iron. Added all to a vacuum sealed bag and cooked it at 135 for 28 hrs (Chef Step says 18+)

Did egg whites whisked to stiff peaks as a binder with Kinder’s SPG blend with rosemary. 475 for 15 mins until a crust formed. Came out super tender; almost perfectly cooked prime rib tender. Might be tempted to use this for the holidays instead of a smoked prime rib like I always do
