    Ingredients:

    1/2 kg tomatoes, roughly chopped
    1 Tsp Oil
    1 tsp panch phoron (five-spice mix)
    Dry red chili
    1 bay leaf
    1/4 tsp black salt
    1/2 tsp regular salt (adjust to taste)
    250 gm jaggery
    8-10 dates, chopped
    A handful of raisins

    Procedure:

    1. Heat oil in a kadhai and add panch phoron, bay leaf, and dry red chili.
    2. Add the chopped tomatoes and cook with black salt and regular salt. Cover and cook until the tomatoes soften slightly.
    3. Open the lid, add jaggery, dates, and raisins, and sauté for 10-20 seconds.
    4. Cover again and cook until the chutney thickens to your desired consistency.
    5. Turn off the heat and serve with paratha, roti, or any dish of your choice.
