This risotto recipe combines earthy wild mushrooms, tender oyster mushrooms, and a luscious mushroom puree recipe I’ve mastered working in restaurants for the passed couple of years, all cooked to creamy perfection. Whether you’re a beginner or a seasoned cook, this step-by-step guide will show you how to make the perfect mushroom risotto with just a few simple ingredients!

Ingredients:
4 tbsp butter
1/2 onion (finely minced)
150g mushroom puree (full recipe here: Mushroom Puree Recipe)
200g dehydrated wild mushrooms
100g oyster mushrooms (stems removed and torn in half)
1 cup Arborio rice
1/2 cup white wine
4-5 cups water (for mushroom broth)
1/2 cup grated Parmesan cheese
2 tbsp finely chopped parsley
Kosher salt & pepper (to taste)
2 tbsp extra virgin olive oil
2 tbsp garlic confit oil or canola oil

Instructions:
Prepare Mushroom Broth: In a medium pot, warm the water to a simmer and add the dehydrated mushrooms for 20-30 minutes. Strain the mushroom broth and keep it warm.
Cook Risotto Base: In a separate pot, heat olive oil and sauté onions until translucent. Stir in Arborio rice and cook until hot. Add white wine and stir until evaporated.
Cook Risotto: Add mushroom broth one ladle at a time, stirring frequently for about 9 minutes, until the rice is al dente.
Cook Oyster Mushrooms: Heat a frying pan with garlic oil, sauté the oyster mushrooms until golden and tender. Season with salt and finish with parsley.
Finish Risotto: Add mushroom puree, butter, and Parmesan cheese to the risotto. Stir until creamy. Adjust with broth or cheese to achieve desired consistency.
Plate and Serve: Garnish with sautéed mushrooms and fresh parsley.
