Artichoke, asparagus, green beans, corn, green onion, squash, nopales, zucchini, mushrooms, potato, leeks, chayote, there’s probably more idk.
Artichoke and asparagus goes especially well with SM Style BBQ imo

I’m not a vegetarian but I grill a lot of vegetables, like squash, corn, everything to make roasted salsa.
I have a tough time thinking grilled watermelon would be good though. Even if it’s not bad I can’t believe it would be better than watermelon that wasn’t grilled.

Smoked red cabbage + sweet potatoes + cauliflower + peppers and onions = veggie fajitas. Very good
