First rack of 321 ribs or pork butt and you’ll be lookin just fine

Read the instructions and read the FAQ’s on the website. An aluminum pan on the bottom rack shields the meat from the hottest area just above the firepot and catches grease drippings. Vacuum out the firepot before each smoke. Cover the smoker when not in use and keep the bagged pellets indoors.

And I really prefer to use disposable roasting pans and a wire rack to make it easier to clean up.
