As someone who lived in Seattle through the 90’s and the 00’s, this is interesting. I’ve had Toshi’s Teriyaki, but I had no clue it was in anyway significant. I am not particularly a Teriyaki fan, but is interesting to learn of Seattle’s significance of it’s role in American cuisine.
