ITALIAN SAUSAGE & PAPPARDELLE PASTA
A quick and easy Italian pasta dish with sweet Italian sausage and a light sauce. Pappardelle is a type of pasta that originated in Tuscany and comes from the Italian verb pappare, which means “to google up”!
SERVES 6, PREP TIME 15 minutes, COOK TIME 15 minutes
INGREDIENTS
• 1 tbsp Olive oil
• 9 ounces bulk Italian sausage (casings removed if using links)
• ½ Onion, finely chopped
• 1 clove Garlic, minced
• 1/2 tsp Red Pepper Flakes
• Optional: ½ pound mushrooms, sliced
• Optional: ½ cup black olives (Kalamata / Greek), pitted and sliced
• 3 tbsp Butter
• Salt and pepper to taste
• 2 tbsp chopped Fresh basil leaves
• 2 tbsp chopped Fresh parsley for garnish
• ½ cup Parmesan cheese, freshly grated
• 8 oz Pappardelle Pasta (Can substitute extra wide egg noodle)
• ½ cup Pasta water or chicken stock
INSTRUCTIONS
1. Put the water on the burner to boil and add a generous amount of salt.
2. In a large skillet, heat oil over medium-high heat. Add sausage, onion, and garlic. Break up sausage with a spoon. Cook until onions are tender and golden, about 5 to 7 minutes, taking care not to burn the garlic.
3. Add the optional sliced mushrooms and/or olives, and the red pepper flakes. Cook for about 5 minutes stirring frequently. Remove the skillet from the heat season with salt and pepper.
4. Add the pappardelle pasta to the boiling water and cook according to the package directions, usually about 6 minutes, until the pasta is al dente. Reserve a ½ to 1 cup cooking liquid and then drain the pasta.
5. Add butter to the sausage mixture and stir. Slowly stir in the reserved pasta water until the mixture has thick sauce-like consistency. Add in the cooked pappardelle pasta and toss to combine.
6. Garnish with fresh chopped parsley and sliced basil. Top with shredded Parmesan cheese and serve. A side salad and sliced French bread or rolls can be served to complete the meal.
