Nourishing, comforting and oh so delicious. This traditional Greek dish is called Fasolakia, and it is a thick and rich olive oil based stew with potatoes, green beans and tomatoes.

This is one of my all time favorites meals, I seriously could eat it everyday! And with all the healthy veggies in here, I don’t see why I shouldn’t 😉

It’s wonderful as a main dish, or as a side to your favorite proteins. You have to try it out!

Ingredients:
-1 large yellow onion, diced
-6 large russet potatoes, quartered
-1 lb. green beans, trimmed and halved
-5 tomatoes on vine, grated
-1 head of garlic, finely diced
-1 cup fresh parsley, chopped
-1/2 cup olive oil (or slightly more, don’t be shy!)
-1 6oz. can tomato paste
-2 tbsp. white sugar (to balance acidity from the tomatoes)
-salt to taste
-1/3 cup water

Directions:

Add your onions, potatoes, salt, and olive oil to a large pot. Then sauté over a medium high heat until softened.

Next, add your green beans, grated tomatoes, parsley, garlic, tomato paste, sugar and water (adjust the exact amount of water so that it almost covers the beans and tomatoes, reference video for the liquid consistency to go for).

Cover with a lid and and simmer over a medium low heat for 30 minutes. Do not boil.

At the 30 minute mark remove the lid, and simmer for an additional 25-30 minutes until the potatoes have absorbed most of the liquid and sauce has condensed and thickened slightly.

Serve with fresh feta and parsley, then enjoy!
