I'm a little confused on if this recipie would be considered safe? I'm finding a lot of information on how dairy products arnt recommend to can/preserve but there's recipes everywhere with dairy products, I'm assuming these are considered rebel Canning? Does anyone know of any safe recipes for Canning an Alfredo sauce that's shelf stable and safe?

  1. Never use AI as a source for canning recipes; it’s the same or worse than random online blogs, TikTok and Youtubes. Go with trusted sites like National Center for Home Food Preservation and the like that have tested recipes and methods. Dairy and fats cannot be canned in a home setting with a couple of exceptions. Here’s info from PennState Extension:

    “Fats and oils interfere with proper heat penetration when processing the food. Fat molecules surround bacterial spores protecting them from destruction, allowing their survival in the “cold spot” in the jar.”

    Hi OP, welcome! This recipe is not safe at all, you are correct that you cannot can dairy at home (industrial canning facilities have machines that can safely do this but not for the home canner unfortunately). This would indeed be considered rebel canning, or just a straight up death wish if you ate this after it being on a shelf. Stay away from you tube, instagram, Facebook, etc they are mostly rebel canners not interested in producing a safe product, they want the “clicks” and “likes” to make money. If you look at the sidebar of this subreddit you will find all kinds of info on safe processes, recipes and links to safe canning sites. Stick to recipes from the National Center for Home Food Preservation (NCHFP), Ball/Bernardin and Healthycanning.com ad you are getting started and learning. As far as I know there are no safe home canning recipes for Alfredo however.
