Woke up yesterday to get bird ready and dry brine going. Thought splitting the bird was real easy and halfway through realized I was cutting through wrong side. Oh well. Let’s see. Through tabby severing it completely in half but decided I’ll throw some foil over the (lateralized) breasts so they don’t get overdone…

    Just cut it half lengthwise. Essentially the same as spatchcocking but easier to handle.

    I did the same damn thing. Realized it after I started cutting down the breast bone and just went with it. Turned out just fine.
