  4. You are so brave! You would appreciate Molly Stevens' book on braising (it just needs more pics . . . what were they thinking?). I, too, have never attempted a brisket. No excuse now, especially since my new apt. has a normal-sized stove that actually works … Dang, those are nice hot pads . . . said the bishop to the actress . . .
