Sadly our restaurant was not fancy enough for this kind of service when I waited tables. It was a NIGHTMARE when one of our wine-enthusiast regulars would come in with a bottle as old as they were for ME to open. The cork would almost definitely disintegrate on contact and we’d have to get cheesecloth and a sieve from the kitchen and take 5 minutes to decant and eventually pour for the table… meanwhile, I’d been triple-sat.
That’s why I stick to screw tops at home 😂
