

24lb fresh turkey, started brining on Tuesday, then started marinating on Wednesday, then 325°F for about 3.5 – 4 hours.
Marinade (taken from ThatDudeCanCook's Peruvian Chicken recipe below, but I multiplied it by four)
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp dried oregano
8 cloves of garlic
1 sprig of fresh rosemary
8 mint leaves
3 tbsp soy sauce
1 tbsp aji amarillo paste
2 tbsp aji panca paste
1 lime juiced
1 tbsp red wine vinegar
1/4 cup olive oil
Salt on pepper directly on the chicken
Green Sauce -Aji Verdé (from Green Healthy Cooking's recipe below but I multiplied it by 2)
2 Jalapeños
1 handful cilantro
2-3 cloves garlic
3 Tbsp avocado oil
1.5 Tbsp lime juice
1/2 cup mayonnaise – preferably homemade
1/4 cup freshly grated Parmesan
sea salt to taste – *
All in all, I got moist turkey with BIG BIG flavor. I was super pleased and the guests were happy.
